STIR FRIED CHICKEN AND
VEGETABLES
 
1 bunch broccoli (sm.)
1 c. sliced fresh mushrooms
1/2 c. water
2 tsp. cornstarch
2 tsp. soy sauce
2 tbsp. peanut oil
1 med. onion, peeled and sliced
1 tsp. minced garlic
1 whole chicken breast, split, skinned, boned and cut in 3/4 in. pieces
1 green pepper, cleaned and cut in thin 1 1/2 in. long strips

Mix water, cornstarch, and soy sauce; set aside.

Heat oil in uncovered wok at 375 degrees. Add onions and garlic and broccoli. Stir fry 1 minute. Add chicken and green peppers and mushrooms. Stir fry 5 minutes. Stir cornstarch mixture into wok mixture, cook until sauce thickens. Serve with steamed rice.
