TABOOLEY SALAD 
1 c. cracked wheat (bulgar wheat)
3/4 c. lemon juice
1 1/2 tsp. salt
1/4 tsp. pepper
3 c. parsley, chopped fine
3 c. tomatoes, diced
1 1/2 c. green onion, finely chopped
1/2 c. cucumber, peeled & diced
1/2 c. mint leaves, finely chopped (optional)
1/3 c. olive oil

Rinse wheat in cold water; drain well. Place wheat in small bowl with lemon juice, salt, and pepper, let stand while chopping vegetables. Toss all ingredients together. Makes 2 quarts.
