BULGUR, FRUIT, AND CHEESE SALAD 
1 c. fine to med. grade bulgur
2 lg. firm Red Delicious apples, cored and diced
1/2 c. chopped dates
4 scallions, chopped
3 c. (about 1 med. head) shredded romaine lettuce
1/2 c. chopped fresh cilantro
1/2 c. chopped fresh parsley
1/3 c. olive oil
1/4 c. fresh lemon juice
3 tbsp. yogurt, preferably homemade
1 tbsp. honey
1/2 tsp. ground nutmeg
Salt and freshly ground black pepper, to taste
1 c. cubed Muenster cheese
2/3 c. toasted slivered almonds
Wheat-Germ honey pitas, cut into halves

Rinse the bulgur and place it in a medium bowl. Cover with cool water and let soak until it is tender to the bite, 20-30 minutes. Drain thoroughly and squeeze out any excess water. Fluff to separate the grains.

Combine the apples, dates, scallions, lettuce, cilantro, and parsley in a large salad bowl. Add the bulgur and toss gently.

Whisk together the olive oil, lemon juice, yogurt, honey, nutmeg, salt, and pepper in a small bowl.

Pour the dressing over the bulgur mixture and toss gently to coat. Refrigerate, covered, to chill.

Just before serving, add the cheese and toasted almonds. Toss to combine and taste to correct seasonings. Serve with warm wheat germ honey pita halves. Makes 8 servings.
