BACON, LETTUCE AND TOMATO SALAD | |
1/2 to 1 lb. bacon, cut in 1-inch pieces 1/3 c. mayonnaise 1/4 c. plain yogurt 2 tbsp. lemon juice 1/4 tsp. pepper 8 c. bite-size lettuce 16 cherry tomatoes, halved 6 slices white or whole wheat bread, toasted and cut in cubes Fry bacon in medium-sized skillet over moderate heat until crisp and golden, turning occasionally. Transfer with slotted spoon to paper toweling to drain. Combine mayonnaise, yogurt, oil, lemon juice and pepper in small bowl. Whisk until smooth. Place lettuce in large shallow salad bowl; add dressing and toss until well blended. Mount cherry tomatoes in center of salad; surround with toasted bread cubes and bacon. |
