INSTANT ENCHILADAS WITH BACON 
1 package frozen taquitos, any flavor
1 can of enchilada sauce, any flavor
1/2 package of cooked bacon - crumbled
1 package grated cheese, any flavor
Toppings (optional) - lettuce, avocado, guacamole, sour cream, chopped tomatoes, sliced black or green olives, salsa, chopped cilatro, diced onions.

Heat oven to 350°F. Pour a small amount of enchilada sauce in bottom of casserole dish. Line the frozen taquitos in the bottom of the dish. Top the taquitos with remaining enchilada sauce. Sprinkle with bacon, then with cheese. Bake for 20-30 minutes until hot and bubbly.

Serve enchilada style on plates and top with extras.
