CIDERED-UP POUND CAKE | |
3 1/4 c. flour 1/2 tsp. salt 3/4 tsp. ground cinnamon 1/2 tsp. baking powder 1/2 tsp. allspice 1/2 tsp. nutmeg 1 c. butter 1/2 c. shortening 3 1/4 c. sugar 6 eggs 1 tsp. vanilla 1 c. apple cider (can be hard) CARAMEL GLAZE: 1/2 c. sugar 1/4 tsp. baking soda 1/4 c. buttermilk 1 1/2 tsp. light corn syrup 1/4 c. butter 1/4 tsp. vanilla Combine flour, salt, cinnamon, baking powder, allspice and nutmeg. Set aside. Cream butter, shortening and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Stir in vanilla. Add dry ingredients alternately with cider to creamed mixture. Spoon batter into greased and floured 10 inch tube pan. Bake at 325 degrees for 1 1/2 hours. Cool 15 minutes; remove from pan and top with Caramel Glaze. Caramel Glaze: Combine all ingredients in a saucepan over medium heat; boil 10 minutes. |
