CORN CHOWDER | |
4 slices bacon 1 lg. onion (chopped) 2 med. potatoes (diced) 2 1/2 c. water 1/4 c. flour 1 lg. can evaporated milk 1 tsp. salt 1/4 tsp. pepper 2 c. whole kernel corn 1/2 tsp. paprika Fry bacon crisp. Remove and save. Saute onion. Cook potatoes in water. Salt and pepper. Remove from heat. Stir in corn with liquid and milk. Blend flour with a little water. Stir into corn mixture. Crumble bacon and mix with onions. Add to chowder. Cook, stirring constantly until thickened (over low heat). Sprinkle each serving with paprika. |
