CHICKEN CHOW MEIN 
1/4 c. butter
2 sm. onions, chopped
1 c. mushrooms, sliced
3 c. chicken, cooked & shredded
2 c. celery, cut in sm. pieces
3 c. chicken stock
2 tbsp. brown sugar
1/4 c. soy sauce
3 tbsp. cornstarch
1/3 c. cold water

Melt butter in large pan. Add onions and mushrooms. Brown slightly. Add chicken, broth, sugar and soy sauce. Simmer until onions are slightly done. Blend the cornstarch in water and add to chicken mixture. Cook until thickened and clear.

Serve over hot Chow Mein noodles.
