3 whole eggs 4 egg yolks 7 tbsp. rich cream 7 tbsp. sugar 1 tsp. salt 1 1/2 tsp. brandy extract Flour to roll (about 4 cups) Beat eggs and extra yolks well. Add other ingredients in order. Roll out very thin and cut into diamond shapes. Drop into deep fat which has been heated to 375 degrees. Fry about 3 minutes or until lightly browned. Lift out with fork, allowing fat to drip off before placing on absorbent paper. Sugar lightly. Makes about 150 depending on size. Cardamon seed may be added to recipe if that flavor is desired. |
