SPINACH SALAD 
1 lb. fresh spinach, cleaned, stemmed, drained, crisped 2 hours
5 slices bacon, fried crisp, drained
1/3 c. sliced almonds
1/4 c. olive oil
3 tbsp. tarragon
1 tsp. sugar
1/2 tsp. dry mustard
3 green onions, sliced with tops
1 red skinned apple, diced
Salt and pepper to taste

Brown almonds in 1 teaspoon of bacon grease, drain. Combine oil, vinegar, salt, pepper, sugar and mustard and set aside. Just before serving break spinach into a bowl. Add green onions, apples, almonds. Crumble in the bacon and drizzle dressing over the salad. 8 servings.
