FEATHER LIGHT PANCAKES | |
3 eggs 1/2 c. milk 1/2 c. all-purpose flour 1/2 tsp. vanilla 2 tbsp. sugar Separate eggs. In small mixer bowl beat egg yolks with electric mixer on high, about 3 minutes. Add milk, beat on low until thoroughly combined. Gradually add flour, beat on low until blended thoroughly. Wash beaters. Combine whites and vanilla. Beat with mixer on medium speed until forms soft peaks. Gradually add sugar, beat until stiff. Stir by hand the white and yolk mixtures. Pour 1/4 cup per pancake on hot greased griddle or heavy skillet. |
