LIGHT AS A FEATHER PANCAKES 
1 1/2 c. flour
3 1/2 tsp. baking powder
1 1/2 tsp. salt
3 tbsp. sugar
1 egg
3 tbsp. vegetable oil (not olive)
1 c. milk

Variations: Add chopped strawberries, blueberries, banana or other fruit pieces to batter before cooking.

Mix all dry ingredients together. In another bowl, mix egg, oil and milk. Slowly add egg mixture to flour mixture; stir only enough to moisten, do not beat. Use 1/4 cup batter for each pancake.

Makes approximately 10 (4 inch) pancakes.
