GREEK SPINACH SQUARES 
2-3 eggs
6 tbsp. whole wheat flour
1 lb. fresh spinach
2 c. cottage cheese
2 1/2 c. grated sharp cheddar
1/2 tsp. salt
2 tbsp. chopped onion
2-3 tbsp. wheat germ
1-2 tomatoes, sliced

Wash and tear spinach into small pieces. In large bowl, beat eggs and whole wheat flour. Add spinach, cottage cheese, cheddar, salt, and onion. Mix ell. Place in greased 8 x 12 baking dish. Sprinkle with wheat germ and pepper. Place tomatoes slices on top. Bake uncovered at 350 degrees for 45 minutes.
