CRACKLING BREAD 
1 1/2 c. enriched cornmeal
1/2 tsp. baking soda
3/4 tsp. salt
1 c. cracklings, diced
3/4 to 1 c. sour milk

Sift together dry ingredients; stir in cracklings. Add milk. Form into 2 oblong cakes and place in greased baking pan. Bake in 400 degree oven for 30 minutes.
