AUNT PEGGY'S CORN MUFFINS 
1 c. boiling water
1 c. corn meal
1/2 c. corn syrup
1 1/2 c. flour
1/2 tsp. salt
5 tsp. baking powder
1/2 c. milk
3 eggs
5 tbsp. oil

Mix together water and corn meal; let stand 10 minutes. Add corn syrup. Mix together flour, salt, and baking powder. Mix together milk, eggs, and oil. Blend dry and liquid ingredients into corn meal mixture. Fill greased muffin tins 2/3 full. Bake at 400 degrees for 15 minutes.
