GUMBO 
2 tbsp. bacon grease or olive oil
1 med. onion, diced
1/2 c. diced bell pepper
1 c. diced celery
1 qt. chicken broth
2 c. canned tomatoes
1 tsp. liquid crab & shrimp boil
1 tsp. salt
1/8 tsp. pepper
1 or 2 c. okra
2 c. diced chicken
1 bay leaf
1 tbsp. parsley flakes

Saute onion, green pepper and celery over medium heat in the oil. Add to large saucepan or crock pot with all other ingredients. Cover and simmer for about 40 minutes or longer. You can use crab or shrimp meat or chicken.
