HAM POT PIE 
1/2 c. chopped onion
3 tbsp. butter
1/3 c. all-purpose flour
1/2 tsp. dried basil, crushed
pinch of salt
2 1/4 c. milk
2-3 c. cooked ham
1 1/2-2 c. green beans
1 1/2-2 c. whole corn
2 tbsp. snipped parsley
Plain pastry

Preheat oven to 400°F.

In a saucepan, sauté onion in butter until tender but not brown. Stir in flour, basil, and salt. Add milk all at once; cook and stir until thickened and bubbly. Add ham, green beans, corn, and parsley to sauce; mix well. Turn mixture into a 12 x 7 1/2 x 2 baking pan.

Meanwhile, prepare plain pastry. Roll out 1/4-inch thick. Put pastry on a baking sheet; poke with fork and bake until golden brown. Transfer to top of casserole using a spatula.

Note: Baking the top crust separately keeps it from getting soggy. No bottom crust is needed.

Bake until heated through (about 15 minutes). Makes 10 servings.
