CHOCOLATE CUPCAKES WITH CREAM
CHEESE FILLING
 
1 egg
1/3 c. sugar
1 (8 oz.) pkg. cream cheese
1/8 tsp. salt
1 1/2 c. flour
1/2 tsp. baking soda
1/2 tsp. salt
1/4 c. cocoa
1 c. sugar
1/3 c. oil
1 c. water
1/3 c. oil
1 c. sugar
1 tbsp. vinegar
1 tsp. vanilla

Combine the egg, 1/3 cup sugar, cream cheese, and salt. Mix until smooth and set aside. Mix together the remaining ingredients. Fill cupcake papers 1/2 full; top each with about 1 tablespoon cream cheese mixture. Sprinkle each cupcake with chocolate chips (using 1 (6 oz.) pkg.). Bake at 350 degrees for 25 minutes. This batch makes 18 cupcakes. HINT: put chocolate mixture in 18 cupcakes first, then divide cream cheese mixture accordingly to 18 cupcakes.
