BROCCOLI PASTA 
1/2 lb. broccoli
1/2 lb. spaghettini
5 tbsp. olive oil
2-3 cloves garlic, minced
1/2 tsp. hot red pepper flakes
2 c. water
Salt to taste
Grated Parmesan cheese

Trim off and reserve top of broccoli. Cut stems into "coins". Cut top into flowerets. Break pasta into thirds. Heat oil in a 9" diameter skillet. (A wok works well!) Add garlic and cook briefly. Add pepper flakes and broccoli. Toss briefly to coat with oil. Add pasta and toss again (be patient, the pasta "jumps" out of the skillet) to keep pasta from sticking to itself or pan. Add 1 cup of water and cover. Continue cooking, stirring often and adding water as it is absorbed, 1/4 cup at a time. Cook until pasta is done, broccoli tender. Total cooking time about 10 to 12 minutes. Serve immediately with lots of Parmesan cheese. Yield: 2 main dishes, 4 side dishes.
