PASTA AND BROCCOLI | |
8 oz. spaghetti noodles 1 tbsp. olive oil 1 garlic clove, crushed 1/4 c. shredded basil leaves or 2 tsp. dried basil 1/2 c. unsalted, chicken stock 1/4 c. pine nuts, toasted 1/2 c. freshly grated Parmesan cheese 1 1/2 c. broccoli flowerets Freshly ground pepper Cook and drain pasta. Heat oil in a large frying pan. Add garlic and saute for about 30 seconds. Reduce heat to low and add the basil and broccoli. Stir well. Add the stock and simmer for 2 to 3 minutes. Add the cooked, drained pasta to the pan with the broccoli. Stir well to coat and warm pasta. Add the pine nuts and the cheese. Sprinkle with some ground pepper. Toss well. Yields: 4 servings. |
