SWEET POTATO PIE 
1 pie shell (9 inch unbaked Pet Ritz shell)
2 lg. eggs, slightly beaten
1 1/2 c. cooked mashed sweet potatoes (equal to 2 med. size potatoes)
2 1/2 c. sugar
1/2 tsp. salt (optional)
1 tsp. cinnamon
1/2 tsp. nutmeg
1 can Carnation milk, undiluted
Optional Garnishes: whipped cream and pecan halves

Preheat oven to 425 degrees. Combine all ingredients into a large bowl and whip until smooth. Pour into unbaked pie shell. Bake for 15 minutes at 425 degrees. Reduce heat to 350 degrees and continue baking for 40 minutes or until knife blade inserted comes out clean.
