ARMENIAN EGGPLANT CASSEROLE 
1 green pepper
1 med. onion
1 med. eggplant, peeled and cut in cubes
2 c. tomatoes
1/2 tsp. salt
1/4 tsp. pepper
2 tbsp. brown sugar

Chop first 3 ingredients fine and brown in fat. Add remaining ingredients; simmer until thickened. Pour into greased casserole and cover with grate cheese and cracker crumbs. Cook at 350 degrees for 1 hour. Serves 6-8.
