SWISS BROCCOLI CASSEROLE 
1 lb. broccoli coarsely chopped
3 tbsp. butter
2 tbsp. flour
3 tbsp. chopped onion
1 1/4 c. milk
2 c. shredded Swiss cheese
2 eggs beaten
2 tsp. salt

Preheat oven to 325. Grease 10 inch baking dish. In 2 quart saucepan, over high heat bring 1 inch water to boil. Add broccoli and 1/2 teaspoon salt. Cover and cook 10 minutes. Drain and set aside.

In same 2 quart saucepan, over medium heat, melt butter. Stir in flour and remaining salt until smooth. Add onion and cook 1 minute longer. Slowly stir in milk. Cook, stirring constantly, until mixture thickens and begins to boil. Remove from heat.

Stir in cheese and broccoli. Stir until cheese melts. Then stir in eggs and pour into baking dish.

Bake 30 minutes or until firm to the touch.
