MANDARIN SPINACH SALAD WITH
POPPY SEED DRESSING
 
1/4 c. white vinegar
4 tsp. sugar
2/3 tsp. dry mustard
2/3 tsp. salt
2 tsp. lemon juice
2/3 c. oil
1 tbsp. poppy seed

Combine first 4 ingredients in a blender and mix well. Add lemon juice. With motor running, slowly add oil. Stir in poppy seeds. 11 oz. can mandarin oranges, drained 1/4 lb. bacon, cooked & crumbled 1 avocado, peeled & sliced 1/4 c. red onion, sliced in rings

Combine above ingredients in a large salad bowl. Pour some of the dressing over the salad and toss well.

NOTE: This recipe makes a lot of dressing so you will have some left over.
