MANDARIN SALAD 
1/4 c. sliced almonds
1 tbsp. plus 1 tsp. sugar
1/4 medium head iceberg lettuce
1/4 bunch Romaine lettuce
2 medium stalks celery, sliced
2 green onions, thinly sliced
1 (11 oz.) can mandarin oranges, drained

Cook almonds and sugar over low heat; stir constantly until sugar is melted and nuts coated. Cool and break apart.

Prepare Mandarin Dressing. Tear apart lettuce and Romaine into bite size pieces; toss with dressing, celery, onions, orange segments, and nuts just before serving.

DRESSING:

1/4 c. vegetable oil
2 tbsp. sugar
2 tbsp. vinegar (Heinz, cider)
1 tbsp. snipped parsley

Shake well before serving.
