CORN AND BACON CASSEROLE | |
2 tbsp. butter or bacon fat 3 tbsp. flour 1 c. milk or 1 c. liqueur from canned corn Salt and pepper to taste 2 c. whole kernel corn 2 med. tomatoes 6 slices lean bacon Melt butter or bacon fat in saucepan, add flour and blend well. Add milk or liqueur from canned corn. Cook until thick; add salt and pepper to taste. Simmer several minutes. Combine this sauce with corn and pour into a 9-inch pie pan. Slice tomatoes in 1/4 inch slices and arrange over corn. Sprinkle salt and pepper. Arrange bacon over tomatoes in pinwheel with curled strip of bacon in center. Bake at 350 degrees for 25 minutes or until bacon is cooked. |
