CHICKEN AND BROCCOLI QUICHE 
1 1/2 c. diced cooked chicken
1 box frozen chopped broccoli, thawed and drained
1 c. Ricotta lite cheese
1/2 c. lowfat plain yogurt
2 eggs
1/4 c. flour
1/2 tsp. baking powder
1/2 tsp. salt
2 tbsp. butter
1/4 c. Parmesan cheese

Preheat oven to 350 degrees. Spray 9 inch pie plate with non-stick. Combine half of chicken and half broccoli in pie plate. Puree Ricotta, yogurt, eggs, flour, baking powder, salt, Parmesan cheese and butter in blender. Pour over chicken. Add rest of chicken and broccoli. Bake at 350 degrees for 30 to 45 minutes. Let stand 10 minutes before slicing.
