SUGAR CREAM PIE 
1/4 lb. (1 stick) butter
1/4 c. flour
1 pt. Half and Half
1/4 c. milk
1 1/2 c. sugar
1 (9 inch) baked pie shell
Cinnamon and nutmeg

Melt butter in a 1 1/2 quart saucepan. Add flour and sugar, stirring with wire whisk to remove lumps. Slowly add Half and Half and milk. Heat to medium high and stir constantly for 20 minutes. if scorching begins, reduce heat. Filling should thicken near end of cooking time. Pour filling into baked cooled pie shell. Sprinkle evenly with cinnamon and nutmeg. Bake in preheated 400 degree oven for 10 minutes or until bubbly. Completely cool before cutting pie.

I use a bit less than 1 pint of half & half and add a tblsp and a half of imitation vanilla flavoring/extract - imo it results in a better pie filling texture and a taste that is a bit more complex. :-)
