SPICY ZUCCHINI BREAD 
3 c. unsifted flour
1 tsp. baking soda
1/4 tsp. baking powder
1 1/4 tsp. salt
2 1/2 tsp. cinnamon
2 c. grated raw unpeeled zucchini, about 2 small
3 tsp. vanilla
1/4 tsp. nutmeg
3 eggs
2 c. sugar
1 c. salad oil
1 c. chopped nuts

Combine flour, baking soda, baking powder, salt and spices. Mix thoroughly. Set aside.

In large bowl, lightly beat eggs with a spoon, stir in sugar and oil. Mix well. Add flour mixture and stir just enough to blend. Mix in zucchini, then vanilla and nuts.

Turn into 9 x 5 x 3 inch loaf pan. Bake in preheated oven at 350 degrees until done, about 50 to 60 minutes. Cool on rack for 5 minutes before removing from pans.
