BEEF CASSEROLE 
1 1/2 lbs. ground beef
1 med. onion, chopped
2 cloves garlic, minced
2 cans whole tomatoes, chopped
1 can cream of mushroom soup
1 pkg. Taco season mix
1 (8 oz.) pkg. noodles
8 oz. cheddar cheese, grated

Cook ground beef until pink is gone. Saute the onion and garlic while the beef is cooking. Cook noodles according to package directions. After the pink has cooked from the beef, add chopped tomatoes, cream of mushroom soup and taco season mix.

Simmer about 5 minutes, then add cooked noodles, mixing well. Let simmer 2 or 3 minutes. Pour into greased baking dish and top with grated cheese. Place in preheated 350 degree oven long enough for cheese to melt. I use my 10 x 14 Pyrex baking dish.
