GINGER SPICE COOKIES 
1/4 c. vegetable oil
3 tbsp. butter
1 tbsp. skim milk
1 egg
1/2 tsp. vanilla
1/2 tsp. salt
1 tsp. baking powder
1/2 tsp. cinnamon
1/2 tsp. ground ginger
1/4 tsp. ground cloves
1 1/2 c. all-purpose flour

TOPPING:

12 packets Sugar Delight (sugar substitute)
1/2 tsp. cinnamon

Beat together oil and butter. Add milk, egg and vanilla; beat well. Sift all dry ingredients together. Blend into liquid mixture. Beat again.

Roll out on wax paper 1/8 inch thick and use a 2 inch cutter to cut them out. Place cookies on a greased baking sheet. Bake at 375 degrees about 9 minutes.

For Topping: Combine sugar substitute and cinnamon in a plastic bag. Place warm cookies in the bag and shake to coat.
