MICROWAVE EGG CUSTARD | |
3/4 c. milk 2 eggs 2 tbsp. sugar 2 tbsp. grated lemon peel 1/2 tsp. vanilla Pinch of salt Ground nutmeg 1. Pour milk into a 2-cup measuring cup. Cook 3 1/2 to 4 1/2 minutes, at power level 6, or until almost boiling. 2. Beat eggs slightly in a small mixing bowl. Add remaining ingredients, except nutmeg. Slowly stir milk into egg mixture. 3. Pour custard mixture into 2 buttered 6 ounce custard cups. Place cups in microwave oven; cook uncovered, 7 to 8 minutes at power level 4, or until set. Remove cups and sprinkle with nutmeg. Set on rack to cool. Makes 2 servings. |
