CHIPPED BEEF IN CREAM 
1 1/2 lb. chipped beef
2 tbsp. butter
2 tbsp. flour
2 lb. potatoes
2 c. milk
1/2 c. grated cheese
Salt & pepper to taste

Cut meat in small pieces the size of a walnut. Place in a saucepan with enough water to cover. Cover saucepan and simmer until meat is done. Drain beef and brown in a pan with 2 tablespoons butter. Add flour, milk, pepper and salt; blend to make a thick sauce. If sauce is too thick, add some of the meat stock. Serve on toast or baked potatoes and garnish with grated cheese.
