MOMMA'S ITALIAN CHICKEN 
1/2 c. fine dry bread crumbs
1/4 c. grated Parmesan cheese
1/4 tsp. oregano
6 boneless chicken breasts
1 beaten egg
2 tbsp. oil
1 c. shredded Mozzarella cheese
1 (16 oz.) can tomato sauce

Mix bread crumbs and Parmesan cheese. Dredge breasts in egg then in bread crumb mixture. Brown breasts in oil and remove to baking dish. Using same skillet, combine tomato sauce and Oregano; heat through and pour sauce over chicken breasts. Bake at 375 degrees for 30 minutes. Sprinkle Mozzarella cheese on top. Continue baking an additional 10 minutes or until done. 9 x 13 inch baking dish recommended. Serves 4 to 6.
