ITALIAN CHICKEN ROLLS 
3 lg. tomatoes, peeled and chopped
1/2 c. tomato sauce
1 med. bell pepper, chopped
2 garlic cloves, chopped
1/4 tsp. oregano
1/4 tsp. black pepper
1 tbsp. parsley
8 skinless, boneless chicken breast halves, pounded flat
1 egg, or egg beaters
1/2 c. cottage cheese
1 tbsp. Parmesan cheese
1 c. Mozzarella cheese

Preheat oven to 350 degrees. In a medium saucepan, combine tomatoes, tomato sauce, garlic, pepper, onion, oregano and black pepper. Bring to a boil; reduce heat and simmer for 15 minutes stirring occasionally. In a small bowl, beat egg. Blend in cottage cheese, Parmesan and parsley.

Spoon 1/8 of this mixture onto each chicken piece. Roll up chicken and secure with a wooden toothpick. Spoon 1/2 of the tomato sauce mixture into an 8 inch dish. Arrange chicken rolls in dish. Pour remaining sauce over the chicken. Sprinkle Mozzarella cheese on top. Bake 45 minutes.
