ORANGE STRAWBERRY MOLD 
1 c. orange juice
2 tsp. lemon juice
1 pt. strawberries
1 pt. low-fat cottage cheese, well drained
3 tbsp. light honey
1/2 c. diced pineapple, well drained
1 tsp. vanilla
1 sm. can mandarin orange sections

Stir together the orange and lemon juices. Reserve 6 or 8 strawberries for garnish. Wash and hull remaining berries. Place them in the food processor along with the orange and lemon mixture, cottage cheese, honey, pineapple and vanilla, and spin until smooth.

Put the mixture in a 6-cup ring mold and chill for at least 3 hours before serving. Garnish with reserved strawberries and mandarin segments. 6 to 8 serving.
