SHERRY'S SUMMER CHICKEN CASSEROLE | |
2 cups, chopped, cooked chicken 4 hard-boiled eggs, chopped 2 cups diced celery 1/2 cup chopped almonds 1/2 tsp salt 2 tbsp grated onion 2 tbsp lemon juice 1 cup light mayonnaise 1 cup baked potato chips, crushed 1/2 cup grated cheddar cheese Preheat oven to 450°F. Spray a casserole dish with cooking spray. In a bowl, combine chicken, eggs, celery, almonds, salt, onion, and lemon juice. Fold in mayonnaise. Turn mixture into casserole dish, top with chips and cheese. Bake for 12 minutes or until cheese has melted and is bubbly. Submitted by: Sherry Monfils |
