CASHEW CHICKEN WITH RICE
CASSEROLE
 
4 chicken breasts, split
2 tbsp. oil
2 tbsp. butter
4 tbsp. brandy
1 can cream of chicken soup
1 c. sour cream
1 tbsp. chopped onion
1/2 tsp. paprika
1/2 c. coarsely chopped cashews
Salt and pepper to taste

Brown chicken in oil and butter. Remove chicken and add brandy and stir to loosen browned bits. Blend in soup, sour cream, onion, paprika, salt and pepper. Add chicken and cover and cook over low heat for 45 minutes, stirring occasionally. Add cashews and cook additional 15 minutes.

RICE CASSEROLE:

1 c. UNCLE BEN'S® long grain rice
1 c. cooking sherry
1/4 lb. butter
1 can beef consomme
1 sm. onion, chopped fine

Combine and place in casserole. Bake at 350 degrees for 1 1/2 hours. Serves 6-8.
