1880 HARRELL'S DRESSED HAM | |
1 lg. ham 1 pt. sorghum molasses 1 cinnamon stick 6 cloves, whole 6 allspice berries 1 tsp. thyme 1 tsp. marjoram 1 tsp. basil 2 tbsp. parsley 6 c. dry bread crumbs or more 1/2 c. sherry 1/2 c. bourbon Sliced pineapple Maraschino cherries Apricots Almonds, toasted, sliced 2-4 egg whites, beaten Boil your favorite ham with the sorghum molasses in water, along with cinnamon stick, cloves and allspice berries. When done, take off skin and fat, leaving about 1". Using an apple corer make deep grooves in ham, diagonally and horizontally. Fill these grooves with the following: Mix bread crumbs with all spices, sherry and bourbon. Use the rest of the mixture to mold it over and around the entire ham. Arrange fruits and almonds in a decorative manner on ham. Spread lightly with beaten egg whites over all. Bake at 350 degrees about 15 to 20 minutes, depending upon size of ham or until it is nicely browned. NOTE: Amount of ingredients can be adjusted as necessary for the size of ham you are dressing. |
