WILD RICE - HAM AND CHEESE SOUP 
2 tbsp. butter
1/4 c. minced onions
1/4 c. flour
4 c. chicken broth
2 c. cooked wild rice
1/2 tsp. salt
1 1/2 c. half & half
2 tbsp. sherry
1/2 c. grated carrots
1/2 c. chopped ham
1 c. grated Cheddar cheese
3 tbsp. slivered almonds

Melt butter in saucepan. Saute onion until tender. Blend in flour, gradually add broth. Cook stirring constantly until mixture thickens slightly. Stir in rice and salt and simmer 5 minutes. Blend in half & half and sherry. Add carrots, ham, cheese and almonds. Heat to serving temperature.

I made a few changes. I added celery and sauted it with the onion. Instead of butter, I sauted the onion and celery in olive oil. I also used fat free half & half and left out the salt. It was fantastic!
