WILD RICE, HAM AND CHEESE SOUP 
2 tbsp. butter
1/4 c. onion, chopped fine
1/4 c. flour
4 c. chicken broth
2 c. cooked wild rice
1/2 tsp. salt
1 1/2 c. half and half or milk
1/2 c. grated carrots
1/2 c. chopped ham
1 c. grated Cheddar cheese
3 tbsp. slivered almonds
Chives for garnish

Fry ham before chopping to brown lightly. Pour grease out. Pour some of soup in pan and scrape brownings off pan.

Melt butter in saucepan. Saute onion. Blend in flour; gradually add broth. Cook, stirring constantly, until mixture thickens slightly. Stir in rice and salt; simmer 5 minutes. Blend in half and half or milk. Add carrots, ham, cheese and almonds. Heat to serving temperature. Garnish with chives. Makes 4 hearty servings.
