WILD RICE SOUP | |
4 med. carrots, grated 1 sm. onion, chopped 2/3 c. wild rice, uncooked 6-8 broccoli florets, chopped 1 can chicken broth plus 1 can water 4 tbsp. flour 4 tbsp. butter 1 pt. half and half 1/2 to 1 c. chopped ham; optional In large kettle, cook carrots, onions, rice, and broccoli in 1 can chicken broth and water for 1/2 hour or until rice is cooked. Mix flour and butter; microwave and mix together; add to large kettle. Add half and half; cook and stir until mixture boils. Boil gently approximately 2 minutes. Add chopped ham. NOTE: Add milk to thin if needed. All ingredients amounts can vary to taste. Might add salt to taste if ham is not added. |
