MUSHROOM ROLL UPS 
1 lg. loaf sliced white bread
1 lb. fresh mushrooms
3 tbsp. flour
1 sm. onion, chopped
Salt and pepper to taste
1/4 lb. butter
3 tbsp. milk
1 tbsp. lemon juice (optional)
1 tbsp. chives, chopped (optional)

Chop mushrooms. Saute mushrooms with onion in butter. Add flour and milk, simmer and mix to paste. Remove crusts from bread and flatten with rolling pin. Spread with mushroom mixture. Roll like jelly roll. Brush top with melted butter. Cut each roll in half. Freeze at this point. When ready to use, bake for 25 minutes at 350 degrees.

These are one of my favorites. On a rainy day I'll make a batch and put them in the freezer. They are easy and are great to have on hand if company comes over for a drink.
