MUSHROOM STUFFED BEEF ROLLS 
3 lb. round steak, 1/2" thick
1 (4 oz.) can mushrooms, drained & chopped
1/2 c. chopped parsley
1/2 c. chopped onion
1 c. grated sharp cheddar cheese
1/4 c. flour
1 tsp. salt
1/8 tsp. pepper
3 tbsp. butter
1 (10 1/2 oz.) can beef consomme, undiluted
1/2 tsp. dry mustard

Cut steak into six portions and pound to 1/4" thickness. Combine mushrooms, parsley, onion and cheese and spread approximately 3 tablespoons mixture over each piece of steak; reserve remainder. Roll steak pieces and fasten with skewers. Coat steak pieces with combined flour, salt and pepper. Melt butter in skillet over medium heat; add steak rolls and brown. Pour off fat. Stir in consomme, mustard and remaining mushroom mixture and heat. Cover and bake in 350 degree oven for 1 1/2 hours or until meat is tender. Makes 6 servings.
