BEEF ROLL - UPS 
1 c. beef broth
1/4 c. butter
2 c. herb stuffing mix (Pepperidge Farm)
1/4 c. minced onion
2 lbs. beef chip steak (this is very thin)
1 tsp. salt
1/4 tsp. pepper
Flour
1 tbsp. butter or oil
1 can onion soup, undiluted

Melt the butter in beef broth; mix lightly with the stuffing and onions. Place stuffing mixture by spoonfuls on meat; roll up and secure with strings - one in middle and one on each end. Coat each roll-up with flour and brown in skillet in the melted butter or oil. Put the roll ups in a 13 x 9 inch casserole dish. Pour the onion soup over all and cover with foil. Bake 1 1/2 hours at 350 degrees or until tender. Makes 6 to 8 roll-ups.
