FLIP-FLOP COBBLER | |
1 c. all-purpose flour 2 tsp. baking powder 1/8 tsp. salt 1 c. white sugar 1/2 c. milk 1 (29 oz.) can sliced peaches, juice reserved* 1/4 c. butter In a large mixing bowl, cream butter with 1/2 cup sugar. In another bowl, combine flour, baking powder and salt. Alternately add these ingredients and milk to the creamed mixture. Spread batter in greased casserole dish or loaf pan. Top batter with fruit, and pour 1 cup of juice over the top of fruit. Top fruit with another 1/2 cup sugar. (Can omit sugar if fruit is already sweet enough to your liking.) Bake at 375°F for 45 minutes. Yield: 6 servings *You can substitute frozen or canned fruit of your choosing for peaches. |
