CHICKEN ROCKEFEELLER 
1 (10 oz.) pkg. spinach, thawed & drained
1 egg, beaten
1/3 c. sour cream
1/2 tsp. each salt & nutmeg
1/8 tsp. red pepper
1/2 c. bread crumbs
2 tbsp. grated Parmesan cheese
6 chicken breasts, skinned, boned, 1/4" thick
Pepper
3 tbsp. butter, melted

Combine first 5 ingredients; set aside. Sprinkle chicken with pepper. Place spinach mixture in center of each breast. Fold long sides over mixture; secure with a wooden pick. Sprinkle cheese over chicken rolls. Roll in crumbs. Sprinkle with butter. Bake in 12"x8"x3" greased dish at 350 degrees for 35 to 40 minutes or 10 to 12 minutes on high in microwave. Serves 6.

Since microwave ovens vary in power, you may need to adjust your cooking time.
