HARVARD BEETS 
1/2 c. sugar
1 1/2 tbsp. cornstarch
1 tsp. salt
1/2 c. beet juice
1/4 c. vinegar
1 tbsp. butter
Pepper to taste
1 qt. beets, cooked and diced

Mix sugar, cornstarch and salt. Stir in liquid from beets and vinegar. Cook slowly, stirring constantly until thickened. Add butter and pepper. After butter is melted, add beets.
