BEETS WITH ORANGE SAUCE 
2 tbsp. butter
3/4 c. water or beet juice
1/4 tsp. salt
3 1/2 c. cooked, diced or sliced beets or rosebud beets
2 tbsp. cornstarch
1 1/2 tsp. grated orange rind
2 tsp. sugar
3/4 c. orange juice
Dash of pepper

If using water instead of beet juice, add a few drops of red coloring. Melt butter, stir in cornstarch. Stir in water slowly. Add orange rind, juice, salt, pepper and sugar. Cook until smooth, stirring constantly. Add beets and heat. 6-8 servings.
