GAMBAS AL AJILLO 
2 lb. shrimp
1 red pepper, chopped
3-4 garlic cloves, finely chopped
1 med. onion, chopped
4 tbsp. olive oil
Salt and pepper to taste

Cook shrimp. Shell and devein. Saute the red pepper, garlic, and onion in the olive oil over medium heat. Add salt and pepper to taste. When the onion is transparent add the shrimp and cook an additional 8-10 minutes. Serve hot.

Serves 6.
